What I’m Loving This Week

Welcome to Monday Moodboard — my weekly roundup of what I’m doing, wearing, eating, sharing, and loving lately.

This week was really about getting back to the basics. After a few weeks of being all over the place, I finally had seven days of consistent workouts, meals at home, lots of water, and a little more sleep — and by Tuesday, I felt like myself again.

Turns out sometimes you don’t need to change everything. You just need to get back to the things you already know make you feel good.

THIS WEEK’S MOODBOARD

A few things making the board this week: early morning sunrises, getting back into the gym, table season starting to pick up, a Champagne chicken recipe, Levi’s shorts on repeat, a guest room refresh, and my new $50 herb planter.

Back to Routine

I was feeling a little foggy and exhausted going into last week, so I made getting back into my normal routine the priority.

I made it to the gym five days, cooked almost every meal at home, brought back my gallon water jug, and finally caught up on some much-needed sleep.

By Tuesday I could already feel the difference.

I also hadn't been working out after my CoolPeel, so I think this was the first week in a while where everything finally lined back up.

With ten days in Montana coming up — and a lot of hiking planned — it felt like exactly what I needed.

WHAT I’M EATING & DRINKING

Dinner at Home

Breakfast around here is almost aggressively repetitive: oatmeal and egg whites. And honestly? I prefer it that way.

Dinner is where I like to have a little more fun.

We cooked at home every night except Friday, and I've been loving having my Wild Pastures subscription stocked in the freezer. Lots of turkey, chicken and ground beef paired with zucchini, squash and simple sides that keep us pretty aligned with how we like to eat during the week.

One of my favorite dinners was a complete throw-together meal that turned into something worth repeating: Champagne chicken.

I had chicken thighs, Dijon, tomatoes, garlic, onion, carrots, and red onion in my pantry, and then decided to pour some Schramsberg sparkling wine into the pan. Apparently Champagne is perfectly acceptable cooking wine (I had no idea) because this was SO good.

Served over rice with fresh basil and a small glass of sparkling wine, obviously.

Recipe

Ingredients:

  • 3-4 Bone In Skin on Chicken Things (mine are from my wildpasture subscription THE best)
  • Red Onion
  • Carrots
  • Garlic Cloves 3-4
  • Baby Tomatoes
  • Fresh Basil
  • 1 c Rice
  • 1/4 c Wine (Sparkling or Still White)

Chicken Marinade:

  • Dijon
  • Wosterschire
  • Garlic Powder, Onoin Powder, Salt, Pepper
  • Avocado Oil
  • Drizzle Honey

Directions:

  1. Preheat oven to 350
  2. Toss chicken in marinade and place into over safe dish
  3. surround the chicken with vegtables and season those with salt and pepper
  4. Pour wine around the vegtables (avoid the chicken so it doesnt remove the marinade)
  5. Cover with foil and bake for 30-40 min
  6. Remove foil and bake for 20 minuites *until chicken reaches 165 internal temp
  7. Broil for 1-2 minutes to get it crispy
  8. Serve over rice and basil garnish

The Gallon Jug Is Back

I know carrying around a gallon jug isn't exactly glamorous, but nothing gets me to actually drink enough water like having the entire day's goal sitting in front of me.

One week back to consistently drinking a gallon and I can already tell a difference.

That said, I am absolutely packing two good bottles of wine for Montana. Balance.

WHAT I’M WEARING

The Summer Uniform Continues

I've been reaching for the same easy basics lately — Levi's shorts, fitted tees and linen.

And now I'm finally getting to pull out a few things for Montana that haven't had much reason to leave my closet in Florida.

The Ariat boots are officially coming back out, I found two dresses (Hollister Dress and Free People Dress) I'm excited to bring, added a new pair of jeans, and my new linen top is absolutely making the suitcase.

I'll share more of what actually makes the final packing list once we're there because Montana weather is going to require a few more layers than my usual Southwest Florida wardrobe.

AT HOME

The Guest Room Is Finally Coming Together

Two little home projects made me disproportionately happy this week.

First: the guest room.

The new rug is down, the dresser is styled, the mirror is up, and this room is finally starting to feel finished instead of like the room where miscellaneous things go to live.

It's amazing how much of a difference a few final details can make. (this bed frame is also from my highschool bed room)

The Fish Is FINALLY Hung

And after living on the floor for what feels like forever... the fish is on the wall.

If you know, you know.

One giant step closer to figuring out what we're actually doing with that room.

My $50 Herb Planter

My old herb garden desperately needed replacing, so I transferred everything into a new rolling planter and gave the herbs a fresh start.

I mixed new soil with some of the old soil, added perlite for drainage, and replanted basil, Italian oregano, rosemary and green onion.

The planter was only around $50, and the wheels may be my favorite part. I can move it depending on the sun — or roll the entire thing inside when Florida decides to throw a hurricane at us.

WORK THIS WEEK

Table Season Is Coming

Thursday was a double Grazing Haus table day, and seeing two big spreads go out in one day made it feel like table season is officially starting again.

We also photographed our newest class offering on Friday, and I've been spending more time thinking about fall events, festivals and what I want the next season of Grazing Haus to look like.

But the biggest win of the week?

One of my biggest corporate clients approved my holiday gifting concept.

I've been working on completely reimagining their gifts this year, including new custom baskets, and getting the green light on the concept made me incredibly excited for what's coming this holiday season.

It's August and somehow we're already talking Christmas.

THIS WEEK’S FEELING

Sometimes the Basics Really Do Work

Nothing revolutionary happened this week.

And maybe that's exactly why it felt so good.

I slept. I worked out. I drank my water. I cooked dinner. We spent Sunday at home cleaning, meal prepping and watching Ted Lasso.

After a summer of constantly going somewhere or thinking about the next thing, one very normal week at home was exactly what I needed.

Sometimes feeling better isn't about finding the next thing to add.

It's about returning to the things that already work.

LOOKING AHEAD

Montana

And now... we're off again.

We leave for Montana this week, and somehow this is probably the least-planned trip I've taken in years.

Normally I research every restaurant, save every stop and have a pretty good idea of how our days are going to look. This time, we have places to stay, a few things we definitely want to do, and a whole lot of open space in between.

Oddly enough, I'm not nervous about it.

Some of our favorite trips have been the ones where we had room to figure it out as we went — Maine and Massachusetts in 2023 being one of them.

So I'm going into Montana feeling pretty confident that we'll find the good stuff along the way.

And after a week of getting myself back into a routine, I'm ready for a little adventure.
