Monday Moodboard: Spring Recipes, Amazon Finds & Lifestyle Favorites

Another Monday, and I’m taking a minute to reset and reflect before jumping into the week ahead.

Lately I’ve been leaning into slower mornings, simple routines, and really enjoying being at home — which, honestly, feels like exactly what this season is meant for. This week was filled with easy meals I’ve been repeating, small local finds, a few good purchases, and little moments at home that just feel really good right now.

Sharing a few of those here — what I’ve been cooking, loving, drinking, and settling into this week.

What I’m Cooking

5 Minute Chicken Salad

This has been my go-to lately when I need something quick but still really satisfying.

I keep it super simple:

  • 1 can Kirkland chicken (rinsed and squeezed well)
  • 1–2 tbsp mayo
  • chopped banana peppers
  • cilantro + cucumber
  • salt & pepper

That’s it. I’ll scoop it with crackers or throw it on whatever I have on hand.

It’s one of those things that doesn’t feel like a “recipe” but somehow always hits — especially on busy days, and helps me hit my protein goals becuase the whole can has 45 g of protein.

Favorite Oatmeal (Every Morning)

This is how I start almost every morning right now. I have been on a gut healing journey since November and I've learned how important warm foods are for us.

I keep the base the same and rotate toppings depending on how I’m feeling (and honestly, where I’m at hormonally — I’ve been leaning into seed cycling a bit).

What stays consistent:

  • chia seeds
  • kiwi
  • peanut butter or almond butter

I never add sugar or syrup — it’s naturally sweet enough, super filling, and when I pair it with egg whites on the side, it keeps me full all the way to lunch.

It’s one of those habits that just works, so I don’t overthink it.

What I’m Loving (and Buying)

Amazon Spring Sale Finds

I’ve been slowly refreshing a few things around the house and also starting to source pieces for spaces I still want to finish — like our front bedroom.

The Amazon spring sale ends tomorrow (3/31), so I’ve been using it as an excuse to grab a mix of things I already love and a few new pieces.

Around Town

Turning Page Coffee

This morning there was a new small business set up at my gym — Turning Page.

I ordered a double espresso (my go-to test for any coffee spot), and I was honestly so impressed. It’s always a good sign when a simple espresso is done really well.

Definitely one I’ll be keeping an eye on and supporting — I love seeing small businesses pop up locally like this.



What I’m Drinking

Rosé Season (Officially)

I picked up this rosé recently for the shop, and it’s one I’m really excited about.

It’s a French rosé, and if you’ve followed me for a while, you know I love French rosé — it’s just cleaner, more balanced, and never overly sweet.

What makes this one even better:
- it’s only $12
- from the same region as Whispering Angel

So you’re getting that same style for almost half the price.

It’s the kind of bottle you can open on a Tuesday and not feel any sort of way.

 

At Home

Spring Garden

Our jasmine wall is finally fully grown in, and it’s easily one of my favorite parts of the front of our house right now. I honestly haven’t shared it as much as I should — this is the view from my office while I work, and it’s just so peaceful. On nice days, I’ll leave the window open so I can hear the fountain which makes it feel even more calming.

This was something I spent a lot of time researching when we first started planning it, so it’s really rewarding to see it come together. I picked up the jasmine from Costco around this time of year, so if you’re thinking about doing something similar, it’s definitely worth keeping an eye out.


 

Poolside Wine

This has been the vibe lately. A cute wine bucket, a bottle chilling, and just enjoying being home.

We’ve worked so hard for this house, and I’m really trying to be intentional about actually enjoying it — not always feeling like we need to go out or do something.
